Before apple pies there were ‘tartys in applis’: pastry tart cases, or ‘coffins’, full of ground apples, pears, figs and raisins, enlivened with ‘good spices’. The recipe for these apple tarts is from an English collection found in a late fourteenth-century manuscript in the Bodleian Library at Oxford (Douce MS. 257, at folios 86r-96v).
